This unsweetened chestnut purée may be used as an an ingredient for poulty stuffing, a base for soup, or a replacement for flour in chocolate cakes.
In the late 18th century, a disease hit silkworms in Ardèche, a region in the Rhône-Alpes, where the abundant mulberry trees had nourished the silkworms and made Ardèche a principal supplier of Lyon’s silk industry. It was at this moment of economic crisis that Clément Faugier turned to another of the region’s trees, the chestnut tree, for salvation. In 1882 Faugier created at Privas the first candied chestnut factory. Next came the special recipe for chestnut spread, as a way to use the extra bits and pieces of candied chestnuts. Today Clément Faugier remains a family business and produces a broad range of chestnut products, all of which are produced without additives.
